Open-Faced Apricot Chicken Salad Sandwiches

Dried apricots and apricot preserves add unique and delicious flavor to this tasty chicken salad served on a slice of dark wheat bread.
cup chopped cooked chicken
1 medium green onion (scallion), chopped (about 2 tablespoons)
4 dried apricots, finely chopped
3 tablespoons apricot preserves
2 tablespoons fat free mayonnaise
2 teaspoons chopped fresh parsley (optional)
2 slices Pepperidge Farm® Whole Grain German Dark Wheat Bread
2 romaine lettuce leaves
Stir the chicken, green onion, apricots, preserves, mayonnaise and parsley, if desired in a medium bowl.
Divide the lettuce and the chicken mixture evenly between the bread slices.
