Coffee Cream and Chocolate Pirouette Parfaits

These sophisticated parfaits feature coffee-flavored mascarpone cream, spiked with wine and garnished with pirouette cookies and shaved chocolate. So easy to make, they're ready in just 15 minutes.
1 canister (13.5 ounces) Pepperidge Farm® Pirouette® Chocolate Fudge Rolled Wafers
1 cup heavy cream
1/3 cup confectioners' sugar
1 container (8 ounces) mascarpone cheese, softened
2 tbsp. sweet marsala wine
1/4 cup prepared coffee or espresso
1 tsp. vanilla extract
1/4 cup grated bittersweet chocolate
Reserve 8 wafers for garnish. Cut the remaining wafers into 2-inch-long pieces.
Beat the heavy cream and sugar in a medium bowl with an electric mixer on high speed until soft peaks form.
Stir the cheese, wine, coffee and vanilla extract in a large bowl with a fork or whisk until the mixture is smooth. Fold in 1/2 cup whipped cream.
Divide the coffee cream among 8 parfait glasses. Top each with about 1/3 cup wafer pieces. Top with the remaining whipped cream and the chocolate. Garnish with the reserved wafers. Serve immediately.
Serving Suggestion: For a chic serving idea, serve this dessert in wine or martini glasses.
