Ingredients & Directions
- 1/2 cup arugula
- 1/2 teaspoon lemon juice
- 1 dash salt
- 1 dash ground black pepper
- 2 teaspoons Dijon-style mustard
- 1 teaspoon mayonnaise
- 1 slice Pepperidge Farm® Whole Grain Ancient Grains Bread with A Touch of Amaranth, Quinoa, Sorghum and Teff, toasted or Pepperidge Farm® Whole Grain Honey Wheat Bread
- 1 hard cooked egg, peeled and cut into 6 slices
Stir the arugula, lemon juice, salt and black pepper in a small bowl. Stir the mustard and mayonnaise in another small bowl.
Spread the mustard mixture on the bread slice. Top with the arugula mixture and the egg. Season with cracked black pepper, if desired.
