Veggie Sandwich

Ingredients & Directions

  • 8 teaspoons low-fat mayonnaise
  • 6 slices Pepperidge Farm® Whole Grain Honey Wheat Bread, toasted
  • 1/2 avocado, sliced
  • 8 tomato slice
  • 4 leafs leaves green leaf romaine lettuce
  • 1/2 small cucumber, cut into 8 slices

Spread half the mayonnaise on 2 bread slices.  Layer with the avocado, 2 tomato slices and 1 lettuce leaf.  Spread 2 bread slices with the remaining mayonnaise.  Place, mayonnaise-side up, on the sandwiches.  Layer with the cucumber, remaining tomato slices and lettuce. Season with ground black pepper as desired.  Top with the remaining bread slices.


Tip: This recipe can be halved to make 1 serving.
