Chessmen® Sandwich Cookies

Ingredients & Directions

  • 16 ounces container frosting(any flavor)
  • 1 bag (7.25 ounces) Pepperidge Farm® Chessmen® Butter Cookies

KIDS: Generously spread the frosting with a plastic knife over the flat side of 12 cookies.

KIDS: Top with the remaining cookies to form a sandwich. Gently press the cookies together to push the frosting out to the edges.

Tips

Alternate Preparation: Chessmen® Gift Box Sandwiches:  
KIDS: Prepare the cookie sandwiches as directed above. Dip the frosting edges in colored sprinkles, sugars or nonpareils.
KIDS & ADULT: Unroll 2 pouches (0.75 ounces each) fruit flavored snack rolls. Cut each roll in half crosswise. Cut each half lengthwise to make 3 strips.
KIDS & ADULT: Wrap 1 strip around the center of the sandwich, twist and turn the strip up and over the opposite side and bring the ends to the center. Tie the ends of the strips to make a bow.

Alternate Preparation: Glazed Chessmen® Gift Box Sandwiches: 
KIDS: Prepare the cookie sandwiches as directed above. Mix 1 cup confectioners' sugar and 2 tablespoons water.
KIDS: Dip each cookie sandwich far enough into the sugar mixture, Chessmen®-side down, to coat the frosted middle. Turn the sandwich over so the glazed side is up and set the sandwich on wax paper, plain-side down.
KIDS: Sprinkle the glazed sandwiches with sprinkles, sugars or nonpareils. Top each with a maraschino cherry half and let dry.

Alternate Preparation: Chocolate Cherry Chessman® Gift Box Sandwiches: 
KIDS AND ADULT: Omit the frosting. Melt 3 ounces semi-sweet chocolate and 1 tablespoon vegetable shortening in a small microwavable bowl on MEDIUM (50% power) for 1 to 1 1/2 minutes, stirring after each 30 seconds.
KIDS: Spread the flat side of 12 cookies with melted chocolate mixture using a plastic knife and top with the remaining cookies to form a sandwich. Gently press the cookies together. Place the cookie sandwiches on wax paper in rows about 1/4-inch apart.
KIDS: Dip a plastic spoon into the remaining melted chocolate mixture. Hold the spoon straight and moving your hand in a back-and-forth motion, let the chocolate drip down over the cookies. You may have to dip a few times to get chocolate on all the sandwiches. Dip the spoon into the chocolate mixture and this time, move your hand in an up-and-down motion, to let the chocolate drip down over the cookies. Top each sandwich with a maraschino cherry half and let dry.
